Our newest Organic coffee, Santuario, will captivate you from the very first aromatic breath… soft golden caramel notes inviting you to take that very first sip.  On the palate, a silky, balanced body, product of their meticulous slow drying offers a luscious interplay of golden apple and rich caramel that provides a grounded sweetness. A subtle crisp apple brightness finally contrasts the deeper notes for a clean, gentle, memorably sweet finish that lingers like a soft confection, and extends an invitation to take another sip!

Yet, the best part of this coffee is —as  always!— the impact beyond the cup. Grown near the Tabaconas-Namballe National Sanctuary in the lush highlands of San Ignacio, Cajamarca, Peru, Santuario embodies an ideal of harmony between people and the planet. It’s farmed by the Asociación de Productores Cafetaleros El Santuario (ASPROCAFE), a cooperative dedicated to championing better livelihoods for coffee families while preserving the beautiful natural ecosystems that surround them. Each cherry was hand-picked and sorted for optimal ripeness, then washed, de-pulped, and fermented for 16–20 hours before being slowly dried on raised beds—a laborious process that enhances clarity and sweetness in every cup. This blend of Bourbon and Caturra varietals, roasted to a smooth Medium (Full City) roast, showcases the art and integrity of the farmers who cultivate it. With every sip, Santuario offers more than exquisite flavor—it offers a connection to the land, to the people who nurture it, and to the shared Ethos of impact and sustainability that gives meaning to our work.

Grown in Ethiopia’s legendary coffee origin region, this Natural-processed, light-roasted Heirloom varietal is a celebration of everything that makes coffee fascinating. From the very first sip, you’re welcomed by soaring floral aromatics that immediately announce what is to come - an equally captivating flavor with juicy notes of strawberry and blueberry, lifted by a delicate hint of peach, all balanced by a lively citric sweetness. We recommend brewing Yirgacheffe as a pour-over—hot or iced—to let its nuanced layers shine through. It also performs beautifully in a French Press, offering a slightly fuller, fruit-forward profile. We’re less than 6 months away from our 10-Year Anniversary, and in an effort to involve YOU, our Ethos family, in this special milestone, we’re launching our first-ever Art Contest, giving you the chance to design our 10 Year Anniversary t-shirts and win free coffee for a year! The theme is coffee and impact—a reflection of the journey we’ve shared over the past decade: from the small farmers who cultivate our beans, to the brewing rituals that ground our daily lives, to the collective impact we’ve made as a community. RE: Coffee... the Secret to Healthy Aging?

For many of us, a morning cup of Ethos isn’t just a ritual—it feels essential to start the day. Now, science is giving us yet another reason to savor it! A study presented at the American Society for Nutrition’s annual meeting just two months ago suggests that moderate coffee drinking in midlife may be linked with healthier aging decades later.

The research drew on the Nurses’ Health Study, one of the largest and most influential investigations into chronic disease risk since the 1980s. Tracking more than 47,500 participants over 30 years, researchers found that those who drank one to five cups of caffeinated coffee per day in middle age were more likely to reach age 70 or beyond in good health. “Healthy aging” was defined as living free of major chronic diseases, maintaining physical and cognitive function, and preserving mental sharpness.

Every 80 milligrams of caffeine from coffee—about the amount in a small cup—was associated with a 2 to 5 percent higher chance of healthy aging. Even after adjusting for diet, physical activity, body weight, and other lifestyle factors, the association held statistically significant. Notably, similar benefits were not found with caffeinated tea or soda, suggesting that it’s not just caffeine at work, but the unique combination of compounds in coffee itself (which include over a hundred bioactive phytochemical antioxidants!).

So the next time you brew a cup, we hope it brings not only joy in the moment but also the reassurance that you are investing in a healthier future—for yourself, and for the smallholder farmers behind every Ethos roast.

🧊 RE: A Cool New Summer Ritual : Iced!

As temperatures soar to record highs, iced coffee has moved from an occasional indulgence to an essential daily ritual for us. And just like a great hot brew, the best iced brew doesn’t happen by accident. At the heart of every great iced coffee are two principles: intentional extraction and precise dilution - and this short read is intended to demystify them!

When thinking about intentional extraction, iced pour-overs are the gold standard. Brew slowly and directly over ice—ideally, ice that makes up half your total brew weight (i.e. if you’re brewing a 16 fl oz cup, you’d use only 8 fl oz of hot water for extraction, and pour it over 8 oz of ice). This flash-chilling locks in volatile aromatics, preserving brightness, body, and nuance in just a few minutes. For best results, adjust your water temperature based on roast level: use 200–205°F for light roasts and 195–200°F for medium roasts.

Espresso over ice also offers a delicious, and faster, route to refreshment, yet here, too, technique matters. Pull your shot directly over ice (we recommend no more than 6 oz of ice per shot, less if you’re also adding milk), or shake it cocktail-style to create a smoother, creamier mouthfeel. What to avoid? Pouring a regular americano, or latte over a full glass of ice - it’s the quickest path to uninspiring brews! Whether you favor pour-overs or Espresso, remember great iced coffee is always the result of intentional extraction and precise dilution.

☀️ RE: Brewing Greatness on the Go this Summer!

As we journey to new destinations this summer, we’re reminded that coffee is more than just a beverage—it’s a ritual rooted in freshness, intentionality, and connection. For those like us, who seek out exceptional coffee, travel often presents a dilemma: do we sacrifice quality and values for convenience, or do we take a few thoughtful steps to ensure every cup is a great one?

After more than a few expensive, disappointing coffees during our travels, we are now convinced our choice is clear: with a bit of preparation, you can brew greatness anywhere. Here are a few practical, road-tested tips to elevate your coffee experience—no matter where your travels take you, from a quick trip across town to an adventure across the world!

1. Start with Freshly Roasted Beans
Plan ahead by ordering your favorite beans a few days before departure. Keep the bag sealed until you're ready to brew and grind just what you’ll need —or if you prefer, you can order ground coffee from us— and store any open bag in an airtight zip-lock bag to preserve its flavors and aromas and avoid spills. Flying? You can safely pack your coffee in either your checked luggage, or your carry-on (which is what we typically do!).

2. Don’t Forget the Essentials
Even if your accommodations include a basic coffee maker, filters and measuring spoons are rarely part of the package. Tucking a few cone filters and your favorite scoop into your bag is a small effort that makes a big difference, especially on that very first morning!

3. Travel Brewers Make All the Difference
Consider packing a compact, reliable brewer like a Hario V60, Aeropress, or a basic collapsible pour-over (there are plenty of options online for as low as $5). Lightweight and versatile, these tools allow you to make an exceptional cup with just hot water—perfect for hotel rooms, campsites, or rental homes where equipment may be limited, or cleanliness may be a bit questionable.

4. Road-Trip? Cold Brew to the Rescue!
For summer travel, few things beat the convenience and refreshment of homemade Cold Brew. Brew a batch in advance and store it in a growler or bottle for the road. With a cooler stocked with ice, homemade syrups, or cold foam, you can easily craft café-quality drinks on the go—ideal for beach days or long scenic drives.

As our days stretch longer and temperatures climb, coffee rituals begin to shift. Steam gives way to clinked ice. Mugs are traded for tumblers. We don’t stop drinking coffee in the summer—we may even ask more of it. We ask it to cool us down, to wake us gently, to travel with us to porches, parks, and beaches. We ask for something refreshing, but still familiar. And to answer that call, we’re pleased to introduce our 2025 Ethereal Summer Blend!

Our Ethereal Summer Blend is our seasonal release created with the warm months in mind. This isn’t just another coffee repurposed for iced coffees. It’s a blend crafted specifically for the demands of summer: smooth, refreshing, and versatile enough to shine whether served cold, over ice, or steaming in the first quiet hours of the morning. While it was designed with cold brew in mind—slow-steeped, smooth-bodied, endlessly drinkable—it performs just as well as a pour-over, an iced Americano, or even a traditional hot brew.

Ethereal Summer is the product of a thoughtful marriage between two distinct coffees—Eclipse, our signature dark roast known for its rich, grounding depth, and Poaquil Natural, our lighter, fruit-forward roast grown exclusively for us by our farmer partners in Guatemala. On their own, each offers something special. Together, they form a conversation between classic and contemporary: the deep roasted and caramel notes balanced by the brightness and red fruit complexity of a modern natural. The resulting cup is layered yet familiar—refreshing, but with enough backbone to satisfy.

Behind this blend is also plenty of impact at origin. It features high-impact coffees grown in Comayagua, Honduras, and Chimaltenango, Guatemala—two high-altitude regions known for their quality. The farmers behind it—members of the Mtn2Sea Ministries Farmer CoOp and the La Asuncion Co-Op—represent two of our most impactful partnerships yet, as we actively champion life-changing prices for their best coffees.

For the perfect cold brew at home, start with 100 grams of coarsely ground coffee for every liter of water. Steep in the fridge for 20 to 22 hours. For those who want to extend their batch’s shelf life and extract even more flavor, try a brief “hot bloom” before steeping: add just enough boiling water to saturate the grounds before adding the rest of the cold water. It’s a small detail that can make a big difference, especially if you’re making Cold Brew for the whole week, or to travel with you!
