New! GUACAMAYA | Honduras

from $15.00

A cup worth savoring! Sweet panela leads the way, followed by a warm, toasted hazelnut character and a gentle touch of milk chocolate. The cup is smooth and balanced, with a sweetness that carries beautifully through the finish—simple, comforting, and incredibly easy to love.

What sets this coffee apart is that it represents the very best coffee that the region has to offer. It is the result of cupping hundreds of samples of the ripest cherries which are hand-selected, density-sorted in water, fermented for about 12 hours before pulping, then fermented again with the mucilage for 18–36 hours, and then sun dried for 20 days. Only the best lots are deemed worthy of the “Guacamaya” name - widely considered among the most beautiful birds in the world. And this is a truly beautiful coffee, worthy of its name.

GRIND GUIDE

Coarse | French Press, Cold Brew, Moka Pot (Percolator), Chemex (and any other slow-flowing Pour-Over methods)

Medium-fine | Drip (standard or programmable coffee makers), single-cup brewers (automatic or one-cup Pour-Over dripper), Aeropress.

We always recommend grinding your coffee fresh for the absolute best experience. Pre-grinding your coffee exposes more surface area to the air, which means faster aroma loss and faster de-gassing/staling. If you must buy ground, we highly recommend placing the whole bag (including packaging) inside an airtight container, and using/opening one bag at a time if possible.

WHY LOVE GUACAMAYA?
La Guacamaya is a beautiful example of what can happen when smallholder producers devote themselves to excellence. This community lot brings together coffees from approximately 10 smallholder producers across the Honduran regions of La Paz and Comayagua. Throughout the harvest, our sourcing partners from Cereza LLC work alongside these farmers to establish quality goals, provide support, and cup hundreds of samples in search of the very best coffees. The result is La Guacamaya—a carefully curated lot that represents the collective work and dedication of an entire community. Each producer processes their own coffee, maintaining control over the details that make their coffee unique. The producers also regularly gather to share knowledge, exchange techniques, and help one another improve. That spirit of collaboration is a big part of what makes this coffee special. In the cup, La Guacamaya reflects the care that goes into every stage of production. Ripe cherries are selectively hand-picked, density-sorted, and fermented before and after pulping. The coffee is then carefully dried on patios and in solar dryers for 20 days.

Recommendations
It’s the perfect morning cup! Shines on Drip, and of course, French Press and pour-overs! Also does well as a single-origin Espresso and pairs well with milk-based drinks.
