This exceptional honey-processed coffee beckons you to embark on an extraordinary sensory journey. As that first sip graces your lips, prepare to be enveloped by sweet caramel and red apple notes and a luscious, juicy mouthfeel—slightly syrupy yet impeccably balanced by delicate citrus notes, offering a rich, multi-layered experience. Subtle spice notes weave through the blend, offering an intriguing counterpoint to the sweeter elements, and a whisper of cranberry adds a sophisticated tartness, elevating the cup's depth. As the experience draws to a close, a lingering sweet caramel apple note again emerges, leaving an indelible impression.

Nestled in the highlands of Peñas Blancas, Matagalpa, this high-altitude, shade-grown coffee was farmed by Luis Montes and his extended family, who are committed to producing the absolute best, most sustainable coffee possible, while creating better opportunities in their small town - including year-long employment for workers, and scholarships for their kids, ensuring they have access to a life-changing education. This passion for excellence and change was evident from our very first conversation back in June 2023, when they impressed us with their meticulous attention to detail at every step of the post-harvest process, and their idealist outlook. And from the very first coffee sample we roasted, we knew we had found something special - we hope you'll love this coffee as much as we do, so that we can support their work again in the future!

GRIND GUIDE

Coarse | French Press, Cold Brew, Moka Pot (Percolator), Chemex (and any other slow-flowing Pour-Over methods)

Medium-fine | Drip (standard or programmable coffee makers), single-cup brewers (automatic or one-cup Pour-Over dripper), Aeropress.

We always recommend grinding your coffee fresh for the absolute best experience. Pre-grinding your coffee exposes more surface area to the air, which means faster aroma loss and faster de-gassing/staling. If you must buy ground, we highly recommend placing the whole bag (including packaging) inside an airtight container, and using/opening one bag at a time if possible.

Recommendations
Fairly versatile, we encourage you to try it on various preparation methods. We loved it on Drip (i.e. regular coffee maker), Pour-Overs, French Press, Syphon, and Cold Brew. Solid single-origin Espresso if you enjoy a bit of brightness and honey sweetness in your shots.
