On the palate, the body feels silky and balanced, the product of their meticulous slow drying, and offers a luscious interplay of golden apples and rich caramel that provides a grounded sweetness. Subtle crisp apple brightness contrasts the deeper notes and the finish is clean, gentle, and memorably sweet — lingering like a soft confection, and leaving you a satisfying impression that extends an invitation to take another sip!

Process: Washed - cherries are hand picked and sorted for optimal maturity, de-pulped at each farm, fermented for 16-20 hours, and slowly dried on raised beds.

GRIND GUIDE
Coarse | French Press, Cold Brew, Moka Pot (Percolator), Chemex (and any other slow-flowing Pour-Over methods)
Medium-fine | Drip (standard or programmable coffee makers), single-cup brewers (automatic or one-cup Pour-Over dripper), Aeropress.
We always recommend grinding your coffee fresh for the absolute best experience. Pre-grinding your coffee exposes more surface area to the air, which means faster aroma loss and faster de-gassing/staling. If you must buy ground, we highly recommend placing the whole bag (including packaging) inside an airtight container, and using/opening one bag at a time if possible.
WHY LOVE “SANTUARIO”?
Nestled in the heights of northern Peru, ASPROCAFE El Santuario is an association founded by 30 small coffee producers committed to Organic farming back in 2017. Their coffees are grown at altitudes of about 1700 meters above sea level in the Cajamarca region, in the district of San Ignacio. It was named “El Santuario” (i.e. “the sanctuary”) for its close proximity to the national conservation area of Tabaconas Namballe. This is a very well organized CoOp that provides technical assistance, collection and export services, with a mission to uplift the livelihoods of coffee-farming families while preserving the natural beauty and ecological balance of their environment. El Santuario isn’t just about producing exceptional coffee, it’s about cultivating a future where people, coffee, and nature thrive—a mission and a future we’re proud to champion!
