September feels a little bittersweet. The days are still warm, so there’s time for a few more cold brews, and though we yearn for cooler weather (particularly here in Florida), we’re not quite ready to say goodbye to summer! But the season is changing—and that means this is the last month to enjoy Ethereal, our 2026 Summer Blend. Ethereal was made for these kinds of days: smooth, refreshing, and full of flavor. It combines the fruit-forward character of Poaquil Natural with just a touch of our dark-roasted Eclipse. The result is a beautifully balanced coffee that shines as cold brew or iced coffee, but is just as lovely brewed hot. If Ethereal has become part of your summer routine, now’s the time to enjoy one last bag—or perhaps a few last batches of cold brew. Our favorite recipe is 1 oz of coarse-ground coffee per 10 fl oz of water, steeped for 20–22 hours under refrigeration.
We’re also down to the last few bags of this season’s Poaquil coffees, including the final pounds of our Anaerobic Honey. As you know, CoOp La Asuncion is our longest-standing High-Impact sourcing relationship, dating all the way back to our very first day as a company in 2016. For nearly a decade, we’ve had the privilege of growing alongside these farmers, seeing them transform from subsistence coffee growing to a full-fledged cooperative operation that now has the capability of doing complex processes, like the Anaerobic! This year’s Anaerobic Honey is especially unique, as they selected their ripest Yellow Bourbons, peeled them, and ran a controlled anaerobic fermentation inside sealed tanks, exclusively for our Ethos family. The result is an incredibly aromatic, sweet cup with juicy dark cherry, caramelized toffee, a smooth body, and a lingering chocolate finish.
This coming season, Poaquil will return as a slightly different Anaerobic Natural. We’re excited to taste what comes next—but these last few pounds of Anaerobic Honey are a special little piece of the journey that we hope you’ll join us enjoying before summer slips into Fall!
