🥳 New Year, New Coffee!

As we embark on a new year filled with possibilities, we’re overjoyed to share with you our newest coffee: Huila! An embodiment of excellence, uniqueness, and impact that embodies our Ethos to change the world one cup at a time!

In the high hills of La Unión, nestled in the heart of Huila, Colombia, a small but determined collective of small farmers is quietly reshaping the future of their coffee community. Guided by a dream of a better life, they have cultivated a coffee that is as remarkable for its flavor as it is for its testament to the power of community and commitment to excellence.. Huila’s tasting notes read like a love letter to nature: honey, plum, and peach - lots of peach! Each sip is an absolute delight, beginning with the gentle sweetness of golden honey, transitioning to the lush ripeness of plum, and finishing with a crisp, bold bright note of peach. These flavors don’t just happen by chance; they are the result of meticulous attention to detail given to these Organic Caturra varietal beans, including a 72-hour anaerobic fermentation to enhance complexity and depth. This one is for the coffee enthusiast seeking something truly special, this one is for YOU, Ethos family! And we bought the entirety of this microlot and are planning to offer it mostly exclusively online (always including our subscribers, of course!) so we can make it last as long as possible!

We have no words to express our immense gratitude for yet another record-breaking year in 2024, so we hope this new coffee reflects our gratitude and commitment to always bringing you the best. This 2025 we really want to set a new bar on off-the-charts excellence, impact, and value - one that’s so compelling and memorable, that we hope you’ll proudly share with anyone who will listen! Some very special beans just arrived at the roastery! It’s the 2022 crop of our Organic “Planadas” from ASOPAP, a Co-Op we have been supporting since 2019. This year’s crop is everything you would wish for in a Specialty-grade Colombian cup: boldness, sweetness, and intensity! Its intoxicating aroma will invite you to immerse yourself in subtle citrus notes that perfectly complement a light caramel sweetness dance on the palate, and its bold finish will leave a lasting impression. It’s now online, and shipping to subscribers starting tomorrow! It is an extremely versatile cup that’s perfect for summer, as its high soluble solids lend themselves well to a variety of brew methods - from your morning Drip to home Cold Brewing!

We also recently launched our 2022 Ethereal Summer Blend , a refreshing cold brew or iced coffee blend featuring our beloved Poaquil Honey this year! This triple single-origin blend aims to be the perfect balance of classic and modern flavors to cold brew or enjoy as an iced pour-over, an iced coffee, or an adventurous hot brew for your summer mornings. Plus, in an effort to expand on healthy, refreshing drink options for us this Summer, we’ve paired Ethereal’s launch with a new herbal (iced tea) offering, our Sunrise Summer tea! We will continue to send extra samples of this one on all your coffee orders >3 lbs this summer, until supplies last (i.e. we’ve drank it all!).

Our 2022 “RE:” technical summer series begins next month, and if there’s any particular coffee topic or question that you would like us to professionally review for you - we would love to know about it! Thank you for continuing to make our impact possible… we’re facing many sourcing challenges (i.e. opportunities!) this year, yet knowing that we have the support of our amazing Ethos family has allowed us to pay historically high prices for all our coffees this year, while continuing to have a thriving business which we hope will be able to sustain this commitment and this work for many, many years!

Blossom, Epic, or Harmony?

The top 3 names for our new Espresso Blend are in! Our new multidimensional Espresso blend featuring classic chocolate, nutty, caramel notes layered with hints of berries is… “Blossom Espresso”, “Epic Espresso”, or “Harmony Espresso”? - please email us back and let us know your pick by April 30th! (we’ll finalize the blend, order labels, and be ready to launch with our May newsletter!). We truly can’t thank you enough for being part of this creative process with us - suggesting names, sharing your thoughts, and voting - and we can’t wait to share the final result with you!

In the meantime… we have an amazing, limited-edition microlot for you! An outstanding 90-pt coffee with a heavy body and intense notes of raisins, plums, stone fruit, and molasses, this Natural Castillo varietal truly honors its name - “La Estrella” - which means “The Star”. Its grower, Yinyini Avilez, is also a star producer and leader within the ASOPAP CoOperative - known for helping his fellow small farmers improve their coffees, and championing others. A few months ago, he decided to use all his expertise and efforts to produce the most perfectly fermented, Organic certified, Natural-processed coffee he could… and we’re so, so happy we were able to buy it ALL for us!

'TIS THE SEASON

I'm a few days late on our monthly blog post (my apologies)... yet it is for good reason - we've been really busy roasting and preparing for our debut at the Tampa Holiday Gift Market, as the winner of this year's Young Entrepreneurship Program! We have FOUR awesome new Fair-Trade Organic coffees joining our lineup for this event - Damas de San Ignacio (a women-grown coffee from Peru), Copan (Honduras), Chiapas (Mexico), and La Cumbre (Colombia), and which will be added to our online store shortly after the event (Nov 9-12). If you're near the Tampa Bay area, please come meet the team! (we'll have special freebies/offers for regular customers, so please let us know who you are!)

We're so excited about this Holiday season! It is our first one at The Roastery, and we really want to make it special for you, our customers - the ones who make everything possible! So... please mark your calendars for:

* Friday Coffee Tastings | Every Friday in December, 5-7 pm | Come relax and enjoy with us the coffees we've roasted that week, along with a beautiful view of Lake Beulah!
